1.5 lbs 93% fat free ground beef
2 garlic cloves
1/2 red onion
1 can kidney beans (drained)
1 can corn (drained)
2 cans tomato
2 Tbl Spn red chili powder
1 can water
Brown and drain beef, add chopped garlic and diced onion. Cook for 5 minutes. Add the remainder of the ingredients and simmer until everything is warm.
Serve with a scoop of non-fat sour cream, sprinkle of cheese and sliced jalapeno.
Hey, you're falling behind on your posts. I know you're busy, I just was waiting for the Monday blog to post my latest results. I finally noticed a difference with the waist measurement, which is -1 inch to a 35". The shorts that were tight and enticed me to join your challenge now fit great, so I don't have to return them after all. I have lost nearly 15 pounds so far and am down from 201 to 186 and 4 oz. My original goal was 186 but I think I'll go a bit further and see if I can't get rid of some more of my middle age spare tire :-). I can see Leatherby's in my future, I'll just have to budget for it, haha.
ReplyDeleteI didn't think anyone was reading them anymore! I am a solid 127... a whole two pounds from where I began. I have almost lost a percentage of fat (if I recall right). I think it is so cool you have lost so much weight! You need to budget for a trip to this fry shop downtown... so good! I mean, the best.
ReplyDeleteI have been eating well in Vegas. Sticking mainly to shakes and somewhat healthy dinners (as healthy as you can get eating out a greasy places). I have kept my portions small. We have also been walking a ton! I'll log in next Monday when we are back in SLC.
