Chili

1.5 lbs 93% fat free ground beef
2 garlic cloves
1/2 red onion
1 can kidney beans (drained)
1 can corn (drained)
2 cans tomato
2 Tbl Spn red chili powder
1 can water

Brown and drain beef, add chopped garlic and diced onion. Cook for 5 minutes. Add the remainder of the ingredients and simmer until everything is warm.

Serve with a scoop of non-fat sour cream, sprinkle of cheese and sliced jalapeno.

Day 39

Same ol' same ol... I am sad because I was supposed to go out to lunch today, but had double booked myself. boo! I did buy a whole lot of different protein bars to test out. From $20 a box to $2/box. All are within a 150 calorie range, with 8+ protein. My favorite is the Atkins Day Break Peanut Butter Fudge Crisp bars are my favorite (by far!) They don't have that protein bar chalky flavor. They have 10g Protein, 1g Sugar, 8g Fiber, 150 calories.
I made a nice chili for dinner. A little higher in calories than I normally like, but great for a snowy night in April.

Day 38

Argh, another sleeping baby night, no gym.... but I did 100 squats and 250 leg raises. Surprisingly, I wasn't sore the next day.. which is weird!
I feel a little bad, because my blogs feel so boring these days, as I am on such a blaze' eating pattern. This weekend should be exciting though, as we are having a tapas and wine party. =)
Dinner: egg white omelet w/ spinach, green chili peppers and salsa. Oh so good. Chalulua perks it up a bit too! I buy the egg whites at Costco... they are 120 calories per cup. If you jazz them up with salsa they taste great (as does anything else!)

Day 37

Sleeping kids interfere with my gym time. lol! Poor Sophia passed out on the way to the gym, which is too bad because she was as excited as I was. Instead of working out we came home and made delicious faux Cafe Rio salads. They were great! I cut the number of tomatillos I used to two, which made the salad dressing a lot less sweet. Have you guys made this yet? If so, how did you like it?

Breakfast: shake + banana
snack: protein bar
Lunch: Shake + berries
Snack: rice pudding
Dinner: Cafe Rio salad w low fat wheat tortilla
sneaky snacks: two thin mints! I can't believe there are any left! lol

Day 36

Well, I weighed in....
Weight: 126.9lb
Fat: 24.4%
Water: 51.1%
Muscle 32.2%

Man, I went to my regular gym last night at 5, it was packed! I mean, not one treadmill, not one bike. I found one solo eliptical that squeaked when I used it. I worked a little bit on toning too, i.e. weights and situps. I decided that I would like to either do 3 days cardio, two weight training, one stretching.. What do you guys do?
My eating is way easy now that I don't have to worry about what to do for breakfast and lunch. I like that! Well, breakfast anyway because I don't normally eat breakfast.
Breakfast: Shake with 1/2 banana & 1/4 cup fruit
Snack: protein bar
Lunch: shake with 1 banana
Dinner: chicken salad sandwich with light miracle whip, apples, grapes and celery. So good!
I was so mad that I was so full after dinner.. I was really excited to eat some rice pudding. waaah. Hopefully tonight. =)

Day 35

Do you guys have those "I'm so exhausted Sundays?", I totally did this weekend. Part of it stemmed from working Saturday morning. Some weekends I just want a break! I took the weekend off from the gym, they have weird kid club hours on Saturday and don't offer anything on Sunday (which is so annoying). Yes, I could have done some at home, but I was pooped! As far as my eating goes, I am eating a lot more in between. I like it, because I am not hungry, but I sip on my shakes, so it feels kind of weird to constantly shove stuff in my face. lol

Breakfast: Shake
Snack: 1/2 egg with spinach and onion
Lunch: shake
Snack: rice pudding
Dinner: piece of cheese, chicken, twiced baked potato, salad and apple pie ala mode

Day 34

Okay, today was much better. Come to find out I was doing the Herbalife shakes wrong.. I am to use soy milk and a fruit (in the shake or on the side) and then snacks in between. Today I wasn't as hungry as I was yesterday. I took a break from working out, but will return on Monday. I am excited for my weigh in on Monday... Hopefully I weigh less since I have been eating better and working out more consistent.
My food logs are going to get really boring. I do need to take the time to write some cool recipes. If you guys have any, please email them to me and I will post them!

Breakfast: Shake w/milk and a banana
Lunch: Shake w/soy milk and berries
Dinner: Chicken salad sandwich w ciabata
Snacks: Yogurt with berries, 3 Costco samples, 1/2 protein bar

Day 33

Wow! What a day! I am a little tentative about this Herbalife stuff. I weighed (we aren't talking about it) and measured myself this morning. I think I have slimmed... I think the fat cells are just getting closer together. Anyway, back to the Herbalife stuff, I take 8 pills, two shakes, three teas and a healthy meal a day. I just can't imagine how you can't lose weight when drinking so much liquid, including the shakes that are only 90 calories. I did add fruit to the first shake, to make it feel more like a meal. By noon I was starving... the shake helped out. I worked out at the gym for an hour.. I would have stayed longer, but Sophia had to picked up from the kids club at 2. Ahh. Tonight I made myself a chicken salad sandwich with miracle whip, chicken, celery and grapes... on ciabatta bread. It is so good!
Breakfast: Herbalife Shake w/raspberries
Lunch: Herbalife Shake
Dinner: Chicken Salad Sandwich
... to come... skinny cow. =)
Exercise: Ran 1 mile... biked for thirty minutes... stretched.

Day 32

A great day! I didn't work out today, per se... but I went to look at houses with my brother and hiked through each house... up and down the stairs with a 36lb kid in tow (she was asleep/tired). By the time we were finished looking at houses I was in no shape to hit the gym. lol
